I read an article that purported to have the ten secrets to the greatest grilled cheese sandwich. Some of the tips were good and very true. For example, every true cheese lover knows that grated or crumbled cheese is better for melting than slices of cheese. And yes, a grilled cheese sandwich is definitely better when it is grilled with real butter. On the other hand, when the writer continued to state that the ultimate grilled cheese sandwich recipe included only two ounces of grated cheddar cheese I nearly fell of my chair. Maybe a grilled cheese sandwich for a child requires only two ounces of only one type of cheese. But the ULTIMATE grilled cheese sandwich certainly requires something more.

I generally use three types of cheese. I always use a bit of cheddar or American as a base. My other two choices are usually something ripe and unpasteurized like a Morbier or maybe even a sheep’s milk cheese. Sometimes I use something milder and nutty like a Comte. There is no true recipe for the ultimate grilled cheese – the key is to use really good cheese and plenty of it. Be creative. There is no wrong answer!
